Pumpkin smoothie

This smoothie is an excellent source of protein with 30 total grams.

Smoothies are an excellent liquid meal supplement. This pumpkin recipe is added sugar-free and is absolutely delicious. The rich and creamy base is composed of coconut and almond milk mixed with a little water. For a creamier base, optionally add bananas or whipped cream. You can also add flax. We think you will agree fresh cooked pumpkin mixed with cinnamon and vanilla is the perfect creamy combination.

Ingredients

  • 2 c cooked pumpkin
  • 1/2 tsp. vanilla
  • 1/2 tsp. ground cinnamon
  • 1 tsp. honey
  • 1 pinch of salt
  • 1/4 c water or crushed ice
  • 1/2 c coconut milk
  • 1/2 c almond milk

Optional extras

  • 1/2 banana
  • 1/2 tsp. ground flaxseed
  • 3 halved figs
  • 1 c whipped cream

Instructions

  1. Cook pumpkin ahead of time and let cool. Optional: try your preferred brand of canned pumpkin, using only 1/2 cup and more milk.
  2. Add all ingredients to blender. Blend until smooth and creamy for about 60 seconds.
  3. Optional: For a creamier smoothie, add the banana.
